Loaf 57 – Lean Loaf, Back To Baking
This is my first loaf in about three weeks, so I just make a simple lean bread using the Reinhart recipe. No big news here – it was easy to get back in the saddle again and make a nice loaf. The texture seemed a bit lighter than I remember it, and it didn’t have quite as much flavor as usual – I think I went a bit light on the salt.
- Mixed, pre-rise overnight in the fridge, shaped and now ready to proof.
- Two hours fifteen minutes of proofing.
- Scored, ready to bake.
- Nice!
- Nice ears.
- Fluffy interior, but not as flavorful as it should have been.
