Loaf 60 – SFBI Sourdough For Family

Part of my collection of accidentally deleted pictures.

My son Eric came home for a few days so I made sourdough for dinner and sandwiches using the SFBI recipe that I’ve done before with my Tartine starter. I made a regular batard loaf and two smaller sandwich loaves.

I let them proof for 3½ hours and they felt and looked ready. After baking, the loaves looked beautiful on the outside but they didn’t develop the open crumb that I have been able to get since Loaf 50. I’m not sure what was different this time.

Sigh.
