Loaf 74 – Flavorless Sourdough?

Something strange is going on that I don’t understand. Just like my sourdough loaves in Boulder (Loaf 69), this batch of sourdough bread had no flavor. I used my home sourdough starter and all my normal processes. I suspect that even though I fed the starter the night before to get it ready for this loaf, it was too long since the last feeding (two weeks) and it needed an extra feeding to get up to full potential.

These loaves were baked for a dinner party for my students, but I ended up throwing these loaves out rather than serving something clearly sub-par.
