I&#8217;ve seen it on quite a few menus, but online recipes disagree on the ratios of lemon and honey. Most recipes start with 2 oz. of gin, and then various combinations of .5 oz and .75 oz of lemon juice and honey is used.<\/p>\n<p>I made my first one with .75oz of each. The honey is a syrup made from honey and warm water; I used 2\/3 honey and 1\/3 water (though some recipes are 50:50).<\/p>\n<p>I used fresh squeezed lemon juice from our tree, though the lemons are very rindy and not too tart. For honey, I used local raw honey mixed with warm water in a 2:1 ratio.<\/p>\n<blockquote>\n<p><strong>Bee&#8217;s Knees<\/strong><br \/>2 oz. gin<br \/>.75 oz. lemon juice<br \/>.75 oz. honey syrup<\/p>\n<p>Shake with ice, strain and serve.<\/p>\n<\/blockquote>\n<p>I used Bombay Sapphire Gin.<\/p>\n<p>The drink was a wonderful cloudy yellow with a nice thin layer of foam on top. I think the honey was a bit overpowering in flavor, so either less honey or one that isn&#8217;t as strong as my local source would be good for the next try.<\/p>\n\n<div id=\"recipe\"><\/div><div
