20150805_183138 (1)A gin drink with lemon juice for acid and honey for sweet. I’ve seen it on quite a few menus, but online recipes disagree on the ratios of lemon and honey. Most recipes start with 2 oz. of gin, and then various combinations of .5 oz and .75 oz of lemon juice and honey is used.

I made my first one with .75oz of each. The honey is a syrup made from honey and warm water; I used 2/3 honey and 1/3 water (though some recipes are 50:50).

I used fresh squeezed lemon juice from our tree, though the lemons are very rindy and not too tart. For honey, I used local raw honey mixed with warm water in a 2:1 ratio.

2 oz. gin
.75 oz. lemon juice
.75 oz. honey syrup

Shake with ice, strain and serve.

I used Bombay Sapphire Gin.

The drink was a wonderful cloudy yellow with a nice thin layer of foam on top. I think the honey was a bit overpowering in flavor, so either less honey or one that isn’t as strong as my local source would be good for the next try.

  • Shake with ice, strain and serve.

Notes

To make the honey syrup, mix a 50:50 ratio of honey and warm water. Cool in refrigerator before using.
