I made a regular batard loaf and two smaller sandwich loaves.<\/p>\n<p>I let them proof for 3\u00bd hours and they felt and looked ready. After baking, the loaves looked beautiful on the outside but they didn&#8217;t develop the open crumb that I have been able to get since Loaf 50.
