No new loaves for awhile because I was traveling in Europe<\/a>. I didn’t ask my wife to feed my starter for me while I was gone, and I left with it already a week old. <\/p>\n

So this is what starter looks like after three weeks in the refrigerator:

It’s very ugly. BUT, the odor was not so bad – just a bit acidic. At 10pm I stirred it up to a consistent off-green color, and did a new feeding of 50% starter, 100% water and 100% 50\/50 whole wheat\/AP flour blend. At 9am the next morning the starter had more than doubled in size, just like it always does.
