I’ve Been Travelling, and Starving Yeast

No new loaves for awhile because I was traveling in Europe. I didn’t ask my wife to feed my starter for me while I was gone, and I left with it already a week old.

So this is what starter looks like after three weeks in the refrigerator:

It’s very ugly. BUT, the odor was not so bad – just a bit acidic. At 10pm I stirred it up to a consistent off-green color, and did a new feeding of 50% starter, 100% water and 100% 50/50 whole wheat/AP flour blend. At 9am the next morning the starter had more than doubled in size, just like it always does. It may have looked ghastly, but everything was doing well inside.
